This imagery is thought to resemble the finely chopped ingredients used in the preparation of pico de gallo.”
While known as pico de gallo in Mexico, this vibrant mix of fresh vegetables and herbs is beloved across the Spanish-speaking world under various names like ají casero, salsa picadillo, pebre and salsa criolla. Peach Pico De Gallo

Ingredients
- 2 ripe peaches, diced
- 2 medium tomatoes, diced
- ½ small red onion, finely diced
- 1 jalapeño, seeded and minced (optional)
- ¼ cup chopped fresh cilantro
- Juice of 1 lime
- ½ teaspoon salt
- Pinch of black pepper
Instructions
- Combine peaches, tomatoes, onion, jalapeño, and cilantro in a medium bowl.
- Squeeze the lime juice over the mixture.
- Add salt and pepper, then gently stir to combine.
- Let sit for 10–15 minutes before serving so the flavors meld together.
