Raspberry Hot Cocoa

While it may be that the coldest days of winter are behind us, this recipe for Raspberry Hot Cocoa is excellent to have in your repertoire! With fresh or frozen raspberries, sugar, chocolate chips and whole milk, this recipe comes together very easily!

Hot cocoa is such a cozy way to warm up after a chilly day outside, and even days in March and April can be pretty cold (especially since we tend to go out more in the spring and possibly not dress as warmly!) Save this recipe and make it next time you need hot cocoa!

All you need to do is make a simple syrup with raspberries and sugar in a saucepan on the stove top, as in the recipe below.

Raspberry Simple Syrup

Ingredients

  • 1 cup raspberries
  • ¾ cup granulated sugar
  • 1 cup water

Instructions

  • In a small saucepan, heat the raspberries, sugar and water over medium-high heat.
  • Turn the heat down to low just before it starts to boil. Let it simmer for about 10 minutes until the raspberries have broken down.
  • Remove from heat and let it cool for about 10 minutes.
  • Once it has cooled enough, run the raspberry syrup through a strainer or cheese cloth. Add 1 tbsp per cup of hot cocoa and store any leftovers in the refrigerator in a sealed container.

Next, in a separate saucepan you’ll want to warm the milk and add the chocolate chips, stirring constantly with a silicone whisk until the chocolate has dissolved. Then add the raspberry syrup. Pour into mugs and top with your favorite hot cocoa toppings like marshmallows or whipped cream. Serve, enjoy and warm up! Bonus if you can serve it front of a fireplace!

  • 8 oz whole milk
  • 2 tbsp semi-sweet chocolate chips (or more to your liking)
  • 1 tbsp raspberry syrup (see recipe)
  • Toppings of your choice (whipped cream, marshmallows, etc.)

Instructions

Heat milk in a saucepan (8 oz per serving). Add chocolate chips and stir constantly with a silicone whisk until combined. Add raspberry syrup once chocolate is melted. Serve with your favorite toppings. Adjust if needed to reach the desired sweetness. Enjoy!
