Clementine Pistachio Salad with Feta Cheese

It’s the start of a new year, so many of us are looking to swap out some of the richer foods we ate during the holidays with healthier options. This time of year is also citrus season, with clementines, oranges and mandarin oranges taking center stage. I tend to have clementines or mandarin oranges on hand a lot this time of year, so I decided to create a healthy Clementine Pistachio Salad recipe. This recipe is loaded with other tasty and healthy ingredients like pistachios, feta cheese, spring mix lettuce and orange zest with balsamic vinaigrette and sliced red onion.

Clementine Pistachio Salad with Feta Cheese


  • 3 cups spring mix, washed and chopped
  • 3 clementines, peeled
  • 1/4 cup red onion, sliced
  • 1/4 cup pistachios, shelled
  • 1/4 cup feta cheese (or cheddar or blue cheese)
  • Zest of 1/2 an orange
  • Balsamic vinaigrette (store bought or homemade)


Mix all ingredients together in a large bowl.

Toss and serve.
