Blueberry Lemon Breakfast Smoothie
Things have been busier at home recently, and so I find myself with less time than normal to sit and eat breakfast. Smoothies have become my go-to for an on-the-go morning, and I love experimenting with different ingredient combinations.
The fruits featured in this recipe transport one instantly to summer through the perfect pairing of sour and sweet. It has all the flavors of summer, plus all the protein, fiber, and vitamins you need for a good start to the day.

I love using whole milk yogurt, but you could also substitute low-fat or Greek depending on your preference. The milk is interchangeable as well; I love to use oatmilk when I have it on hand. This recipe makes enough to share, but you can adjust the amounts to make as much as you need. Like all smoothies, particularly those that contain both dairy and citrus, it’s best consumed soon before it starts to separate.
Blueberries are in season here now and they are abundant and delicious this year! The drier weather makes the berries super sweet! Blueberries are full of antioxidants, they can lower blood pressure and cholesterol and aid in digestion.

Makes 4 cups (two servings)
Ingredients
- 2 cup blueberries
- 1/2 cup rolled oats
- 1 peeled lemon, cut into pieces
- 3 tbsp honey
- 1 cup whole milk yogurt
- 1 cup milk
Instructions

- Prepare the fruit by washing the blueberries and peeling and cutting up the lemon into chunks

- Place all the ingredients into a blender and blend at a high speed until smooth, about 3-4 minutes
- Pour into two cups and enjoy immediately! Garnish as desired with blueberries and lemon zest.
