Blackberry Ricotta Pizza

Pizza night is a favorite in my house, and I’m always changing the toppings based on what I can use up in our fridge. This week, I had a bowl of locally harvested blackberries so I decided to experiment. I came up with a pizza that’s both sweet and savory, perfectly capturing the essence of summer. 

As a milder cheese, ricotta pairs well with the tart berry. Its smooth texture provides the consistency of  “sauce,” flavored with garlic and Italian seasoning.

With both mozzarella and Parmesan, the cheese mixture toasts beautifully in the oven, and the cooked juicy blackberries just melt in with everything else. I love to make pizza dough from scratch, and I often make multiple batches up at a time so I can quickly pull a crust out of the freezer when I need something quick.

Depending on the amount of time you have, you could either make your dough from scratch or use a pre-made one for a super quick but impressive meal. Topped with fresh basil and a drizzle of honey, the pizza is as eye-catching as it is delicious. Try it and let us know what you think!

Blackberry Ricotta Pizza

Ingredients

  • 1 pizza crust
  • 1 tbsp olive oil
  • 2 cups ricotta cheese
  • 2 cups shredded  mozzarella cheese
  • 1/2 cup Parmesan cheese
  • 1 tsp salt
  • 1 tablespoon Italian seasoning
  • 2 cloves minced garlic
  • 2 cups whole blackberries
  • Fresh basil for garnish
  • Honey for garnish

  1. Preheat oven to 425°F.
  2. Prepare the pizza crust on a pain and spread the tablespoon of olive oil over the entire thing
  3. In a bowl, mix the ricotta, mozzarella, salt, Italian seasoning, and garlic. Mix well.
  4. Spread the ricotta mixture evening over the pizza crust leaving a 1/2-inch border
  5. Evenly spread the blackberries over top of the ricotta mixture. If your blackberries are especially large, you might want to cut them in half longwise.
  6. Bake in the oven for 20-25 minutes, or until the pizza dough is cooked and the cheese is lightly browned.
  7. Garnish with chopped fresh basil and drizzle with honey. Serve warm and enjoy!
