This simple, healthy side salad recipe comes together in just a few minutes! Simply shred the carrots and apple in a food processor (I used peeled baby carrots, but you could also peel and use whole carrots.) Then mince the garlic and whisk together the dressing ingredients, pour it on top and stir it all together.
This could be eaten just plain, or you could use it in a wrap with cream cheese or cold cuts too!

Ingredients
- 1 cup carrots
- 1 apple (Honeycrisp, Gala or Pink Lady®)
- 1 clove garlic
- 1 TBSP apple cider vinegar
- 1 TBSP olive oil
- 1 TBSP maple syrup
- Freshly cracked pepper
Instructions
Shred the carrots and apple in a food processor. Transfer to a large bowl.
Mince the garlic with a garlic press. Add the minced garlic in with the carrots and apple and stir to combine.
In a small bowl, combine the apple cider vinegar, olive oil, maple syrup and freshly cracked pepper together.
Whisk to combine. Pour dressing mixture over the carrot and apple mixture. Stir to combine.
Notes
This Apple Carrot Slaw recipe makes about 2 servings. Increase the quantities as needed.
