Apple Cider Glazed Carrots

Apple Cider Glazed Carrots

  • 6 large carrots
  • 1/2 cup apple cider
  • 1 tsp cinnamon
  • 1 tbsp dried rosemary (or 2 tbsp fresh)
  • 1 tbsp maple syrup
  • 2 tbsp olive oil
  • 1 tsp salt

Instructions

  1. Preheat the oven to 400 degrees. Peel and chop the carrots into strips about 1/2 inch thick and set aside.
  2. In a small saucepan, add the apple cider, cinnamon, rosemary, and maple syrup. Bring to a boil over medium heat and allow to simmer until reduced for 6-7 minutes
  3. Toss the cut carrots with the olive oil and salt, and then lay them out evenly over a baking pan. Pour the apple cider reduction over the carrots and toss again,
  4. Roast in the oven for 25-30 minutes, using a spatula to turn the carrots after 15 minutes. Serve hot and enjoy!
