This year, they officially took the leap into the commercial baking world, earning their license and opening their own bakery space in a converted three-car garage. With six employees working side by side, their hope is to turn this venture into a thriving, long-lasting family business.

We were able to ask a few questions of Melvin and Liz to hear more about the start and the heart behind Walnut Valley Cheesecakes. This is what they shared:
Q: Can you share the story behind Walnut Valley Cheesecakes? How did your family get started in the cheesecake business?
A: We first made a cheesecake in 2018 for our own wedding. From there, we began baking cheesecakes for local friends’ and family members’ weddings. Over time, the demand kept growing, and earlier this year we decided to officially start a commercial bakery with a license. We now work out of our converted three-car garage with six employees, and our hope is to grow Walnut Valley Cheesecakes into a family business that can be passed down for generations.
Q: What inspired you to specialize in cheesecakes, and what sets yours apart from others?
A: We love how versatile and beautiful cheesecakes can be. Ours are decorated with rosettes and other designs, making them more decorative and elegant than a traditional cheesecake. We want them to taste amazing and also look like something worth celebrating.
Q: Is there a meaning behind the name “Walnut Valley Cheesecakes”?
A: Yes! There are walnut trees growing on the property near our bakery, and we wanted our name to reflect something personal and connected to our home.
Q: Can you walk us through a typical baking day? What does the process of making one of your cheesecakes look like?
A: Our mornings start by mixing cream cheese for the batter. We put the batter into a hopper and then fill the pans. Next, we add the swirl flavors if we need to, bake the cheesecakes in the oven, and then let them cool. After that, they go into the freezer to set, and finally, we hand-decorate each one before placing it in its box.
Q: What flavors do you currently offer, and do you have a personal favorite?
A: We offer eleven flavors plus one seasonal flavor. Some of our customer favorites include salted caramel, raspberry swirl, strawberry swirl, blueberry swirl, caramel apple, chocolate peanut butter, and lemon. Our seasonal flavor right now is pumpkin. It’s hard to pick a favorite, but salted caramel is definitely at the top of my list.




Q: Why did you choose to partner with Weaver’s Orchard to sell your cheesecakes?
A: We first brought some samples to Weaver’s Orchard, and in return, they shared some of their cider with us. From there, we realized how much we had in common in terms of values and commitment to quality. It was a natural partnership, and we’re excited to work together.
Q: Are there any new flavors or ideas you’re hoping to explore in the future?
A: Since we’re just starting out, there’s a lot of room for creativity. We’re hoping to expand our menu over time, and one flavor we’ve been thinking about is peppermint bark for the holidays.
