Tomato Sausage Pastries

Ingredients
- One package puff pastry
- 1 egg
- 1/2 cup shredded mozzarella cheese
- 1/2 pound cooked ground breakfast sausage
- About 20 small cherry tomatoes in varying colors
- 2 tbsp parmesan cheese
- 1 tbsp Garlic Powder
- Pepper to taste
Instructions
- Preheat the oven to 350°F. Open the package of puff pastry and cut each sheet into nine squares, for a total of 18 squares. Lightly score a small square inside each square of dough.
- Beat the egg and brush lightly over each square of pastry, focusing on the border around the edge.
- Cook the sausage if it isn’t already prepared. Place a spoonful of sausage in the middle of each pastry, within the borders of the scored square.
- Top with a sprinkle of mozzarella cheese.
- Slice the tomatoes into thin slices and place about three on top of each pastry.
- Top each pastry with a sprinkle of parmesan cheese, garlic powder, and pepper as desired.
- Bake for 30–45 minutes, checking often to avoid burning the pastry.
