Tomato Sausage Pastries

Ingredients

  • One package puff pastry
  • 1 egg
  • 1/2 cup shredded mozzarella cheese
  • 1/2 pound cooked ground breakfast sausage
  • About 20 small cherry tomatoes in varying colors
  • 2 tbsp parmesan cheese
  • 1 tbsp Garlic Powder
  • Pepper to taste

Instructions

  1. Preheat the oven to 350°F. Open the package of puff pastry and cut each sheet into nine squares, for a total of 18 squares. Lightly score a small square inside each square of dough.
  2. Beat the egg and brush lightly over each square of pastry, focusing on the border around the edge.
  3. Cook the sausage if it isn’t already prepared. Place a spoonful of sausage in the middle of each pastry, within the borders of the scored square.
  4. Top with a sprinkle of mozzarella cheese.
  5. Slice the tomatoes into thin slices and place about three on top of each pastry.
  6. Top each pastry with a sprinkle of parmesan cheese, garlic powder, and pepper as desired.
  7. Bake for 30–45 minutes, checking often to avoid burning the pastry.
  8. Serve immediately. You can refrigerate leftovers for up to 3 days, but they are best enjoyed warm.
