Blended Pancakes

Ingredients

  • 1 cup plain kefir
  • 1/2 cup wheat, spelt or einkorn berries
  • 1/2 cup rolled oats
  • 1 egg
  • 1 tablespoon honey
  • 2 tablespoons butter
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda

Instructions

  1. Put first 3 ingredients into a blender, and blend on high for 3 minutes. Let set at room temperature overnight.
  2. In the morning, add the next 4 ingredients to the first 3. Blend everything for 1 minute or until mixed well. Then gently stir in final 2 ingredients.
  3. Fry the mix on a lightly greased skillet until golden brown.
  4. Serve with fresh whipped cream and maple syrup.
