Peach & Balsamic Compote

Soft cheeses and stinky cheeses love the acidic sweetness of peaches, especially when they’ve been cooked down. Whip up this compote during peach season to make a luscious pairing for creamy cheeses, such as brie or Havarti. Makes 1 ½ cups.

Ingredients

  • 3 large ripe peaches (about 3 cups chopped)
  • ¼ cup granulated sugar
  • 2 tablespoons balsamic glaze or balsamic vinegar
  • ¼ teaspoon salt

Instructions

  1. Mix the chopped peaches, sugar, vinegar and salt in a small saucepan over medium high heat. Simmer the mixture for about 5 minutes, stirring occasionally, until fruit has softened.
  2. The sugar will melt as the peaches release their juices. Remove from heat, let cool.
  3. Great with mascarpone or ricotta over waffles!
