Pumpkin Ginger Ice Cream Pie

  • Crust:
  • 30 Ginger snap cookies, crushed.
  • 1/3 cup melted butter
  • Filling:
  • Mix together:
  • 115 ounce can pumpkin
  • 2/3 cup sugar
  • ½ teaspoon salt
  • 1 teaspoon ginger
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • Add:
  • ½ gallon vanilla ice cream, softened.
  • Top with:
  • ½ cup chopped pecans

Instructions

  1. Crush ginger snaps. Melt butter. Pour melted butter into bowl of crushed ginger snaps and mix thoroughly.
  2. Press mixture into 2 pie plates (or use a 9 x 13 pan).
  3. Mix together pumpkin, sugar, salt, ginger, cinnamon and nutmeg.
  4. Add vanilla ice cream, softened. Mix well and spread on top of crust. Top with chopped pecans.
  5. Freeze till ready to serve.
