Vegan Autumn Applesauce Cookies

Ingredients

  • ½ cup vegan margarine, softened (or if you are not vegan, butter)
  • ¾ cup sugar
  • ¼ cup brown sugar, lightly packed
  • Egg replacement equal to 1 egg (or if you are not vegan, 1 egg)
  • 1 ¼ cups applesauce
  • 2 2/3 cups flour
  • ¼ teaspoon salt
  • 1 teaspoon baking soda
  • 2 teaspoons cinnamon
  • 1 teaspoon cloves
  • ¼ teaspoon ground ginger
  • ¼ teaspoon cardamom
  • ¼ teaspoon allspice
  • ¾ cup raisins
  • ¾ cup walnuts, chopped

Instructions

  1. Preheat oven to 400 degrees.
  2. Cream margarine, sugar and brown sugar together in a large bowl. Stir in egg replacement and applesauce.
  3. In a separate bowl, mix flour, salt, baking soda and all spices. Gradually combine the flour mixture with the wet ingredients. Stir in raisins and walnuts.
  4. Drop by tablespoon onto ungreased cookie sheet. Bake for 11-13 minutes.
  5. Remove from baking sheet to cool.
