Peel and cut the sweet potatoes into 1 inch cubes. Wash and chop the bell peppers into bite sized pieces.
Slice the sausage into 1/2 inch rounds.
Place the sweet potatoes, bell peppers and sausage on a sheet pan. Drizzle with olive oil and add the spices. Toss well to coat evenly. Spread everything into a single layer.
Bake for 25 to 30 minutes. Stir halfway through for even roasting. The sweet potatoes should be tender and lightly browned.
Serve warm and enjoy. This dish works well on its own or with a tossed salad or cooked grain like rice or couscous.
