Oatmeal Pancakes

Adapted from


  • 2 cups almond milk
  • 2 cups old fashioned rolled oats (not instant)
  • 2 eggs, beaten
  • 1/4 cup oil
  • 3/4 cup flour
  • 2 tablespoons honey
  • 2 1/2 teaspoons baking powder


  1. Combine almond milk and oats. Let sit for at least ten minutes, until oats have absorbed milk.
  2. Add eggs, honey and oil. Mix well.
  3. Add remaining ingredients and mix.
  4. Heat a griddle and brush with oil.
  5. Add a ladle full of batter, cook until bubbles form, then flip and remove from heat.
