5 Minute Fresh Salsa

- 4 Plum tomatoes
- 1 red pepper
- 1/2 medium red onion
- Juice of 1 lime
- 2 tablespoons chopped cilantro
- salt (approximately 1 tsp) and pepper to taste
- *Optional: diced jalapeno pepper or cayenne pepper flakes, to taste
- Pulse the pepper and onion in a food processor until there are no more big chunks.
- Add the tomatoes and pulse until combined. Add the lime juice, salt and pepper and cilantro. Add the jalapeno or cayenne pepper if using. Pulse one last time to combine.
- Serve with tortilla chips.
