Creamy Tofu Vegetable Spread
- 1 450 gram package firm tofu, drained and patted dry
- 2 tablespoons lemon juice2 tablespoons apple cider vinegar
- 2 garlic cloves, minced
- ¼ cup plus one tablespoon coconut oil, melted
- 1 package “Fresh Vegetable Dip with Dill” spice mix by Dip_n_Dill from Weaver’s Farm Market:
- Salt to taste
- Extras for stirring in before serving:
- 2 fresh scallions, sliced
- ¼ cup toasted pine nuts
- 1/2 to 1 tablespoon fresh minced dill, according to taste
- 1/2 to 1 tablespoon fresh, minced basil, according to taste
- 1/2 to 1 tablespoon fresh, minced parsley, according to taste
- Add the tofu, lemon juice, vinegar, garlic and coconut oil to a blender and blend until creamy and smooth.
- Stir in the spice mix packet.
- Add salt to taste, and stir in any desired extras, such as scallions, pine nuts or fresh herbs.
- Serve with toasts, crackers or cut, raw vegetables.
- Alternatively, you may use it as a sandwich spread
