Ingredients

  • 1 cup course grain cornmeal (1/4 cup per person as a side)
  • 45 cups water
  • 4 Tablespoons butter
  • Salt to taste

Instructions

  1. Bring water to a boil. Add cornmeal, butter and salt and whisk together. Reduce heat.
  2. Cook covered on medium-low for 30 minutes, stirring approximately every 5 minutes.
  3. It will be ready when it’s thick and creamy and the grains are tender.
