Cheddar Broccoli Pancakes

Crispy on the outside and filled with broccoli and plenty of cheesy flavor, these little pancakes make a simple after-school snack. They’re also easy to eat by hand, making them a good option for busy afternoons when kids need something filling before heading off to sports, homework or other activities.

Ingredients

  • 2 cups broccoli
  • 2 eggs
  • 1/2 cup panko breadcrumbs
  • 1/4 cup Parmesan cheese
  • 1/4 cup cheddar cheese, plus more for topping
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt

Instructions

  1. Add the broccoli, eggs, panko breadcrumbs, Parmesan cheese, cheddar cheese and salt to a food processor. Pulse until the ingredients are finely chopped and well combined.
  2. Heat the olive oil in a skillet over medium heat. Drop rounded tablespoons of the broccoli mixture into the hot skillet.
  3. Cook until the bottoms are golden brown and crisp. Flip each pancake, then gently press it with a spatula to flatten it slightly. Continue cooking until the second side is golden and the pancakes are cooked through.
  4. Transfer to a plate and sprinkle with additional cheddar cheese, if desired. Serve warm.
