About Easy Bruschetta Meals
The idea for the Easy Bruschetta Meals cookbook was born in 2013 when I planted 48 tomato plants in the garden we shared with Justin & Elizabeth Weaver. After canning 32 jars of salsa, 18 jars of marinara sauce and a handful of jars of diced tomatoes, I decided it was time to try a new tomato canning recipe. My friends always loved my fresh bruschetta, so why not try to can it to savor all year long? I got to work developing (and pH testing) this recipe to ensure that it is delicious and safe for canning.
If you didn’t get to can any this year – don’t worry! The recipe can be made with fresh plum tomatoes or diced canned tomatoes and then used within 5 days or frozen for later use.
